Cake:

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups vegetable oil
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 4 cups apples, peeled and chopped into 1/2-inch chunks

Glaze:

  • 1/3 cup butter
  • 1/3 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1/3 cup heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9×13-inch baking pan with non-stick spray.
  2. In a medium bowl, sift together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, beat vegetable oil, granulated sugar, and brown sugar with an electric mixer. Mix in vanilla and eggs, one at a time.
  4. Add dry mixture gradually, mixing well. Batter will be thick.
  5. Fold in chopped apples with a sturdy spoon.
  6. Spread batter into prepared pan and bake 50–60 minutes, until a toothpick comes out clean.
  7. While baking, prepare glaze: combine butter, brown sugar, granulated sugar, heavy cream, and vanilla in a saucepan. Heat until simmering. Remove from heat and cool 5 minutes.
  8. Pour glaze over cake while still warm. Slice and serve.

Notes

  • Use Granny Smith or other firm, tart apples for best results.
  • Optional: Add 1 cup chopped pecans or walnuts to the batter.
  • Store at room temperature or in the fridge up to 5 days, or freeze up to 3 months.
