Cake:
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 1/2 cups vegetable oil
- 1 1/2 cups granulated sugar
- 1/2 cup packed brown sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 4 cups apples, peeled and chopped into 1/2-inch chunks
Glaze:
- 1/3 cup butter
- 1/3 cup packed brown sugar
- 1/3 cup granulated sugar
- 1/3 cup heavy cream
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (160°C). Grease a 9×13-inch baking pan with non-stick spray.
- In a medium bowl, sift together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, beat vegetable oil, granulated sugar, and brown sugar with an electric mixer. Mix in vanilla and eggs, one at a time.
- Add dry mixture gradually, mixing well. Batter will be thick.
- Fold in chopped apples with a sturdy spoon.
- Spread batter into prepared pan and bake 50–60 minutes, until a toothpick comes out clean.
- While baking, prepare glaze: combine butter, brown sugar, granulated sugar, heavy cream, and vanilla in a saucepan. Heat until simmering. Remove from heat and cool 5 minutes.
- Pour glaze over cake while still warm. Slice and serve.
Notes
- Use Granny Smith or other firm, tart apples for best results.
- Optional: Add 1 cup chopped pecans or walnuts to the batter.
- Store at room temperature or in the fridge up to 5 days, or freeze up to 3 months.
