  • 4 pieces skinless boneless chicken breasts (about 1.5 lb)
  • 1 teaspoon Italian seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Sea salt and pepper, to taste
  • 12 stalks asparagus, ends trimmed
  • 1 ounce tomatoes, chopped
  • 4 slices mozzarella cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place chicken breasts on a chopping board. Season with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. Carefully cut a lengthwise pocket into each chicken breast without slicing all the way through.
  4. Stuff each pocket with 3 asparagus stalks, chopped tomatoes, and 1 slice of mozzarella. Secure with toothpicks if necessary.
  5. Heat olive oil in a large skillet over medium heat. Sear chicken for 3–5 minutes per side until golden brown.
  6. Transfer skillet to oven (or place chicken in a baking dish). Bake 15–20 minutes, until chicken is fully cooked and juices run clear.
  7. Remove toothpicks before serving and let rest a couple of minutes before slicing.

  • Use similar-sized chicken breasts for even cooking.
  • Swap mozzarella with provolone or cheddar for a different flavor twist.
  • Serve with roasted veggies, rice, or a fresh salad for a complete meal.
