- 4 pieces skinless boneless chicken breasts (about 1.5 lb)
- 1 teaspoon Italian seasoning mix
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Sea salt and pepper, to taste
- 12 stalks asparagus, ends trimmed
- 1 ounce tomatoes, chopped
- 4 slices mozzarella cheese
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Place chicken breasts on a chopping board. Season with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
- Carefully cut a lengthwise pocket into each chicken breast without slicing all the way through.
- Stuff each pocket with 3 asparagus stalks, chopped tomatoes, and 1 slice of mozzarella. Secure with toothpicks if necessary.
- Heat olive oil in a large skillet over medium heat. Sear chicken for 3–5 minutes per side until golden brown.
- Transfer skillet to oven (or place chicken in a baking dish). Bake 15–20 minutes, until chicken is fully cooked and juices run clear.
- Remove toothpicks before serving and let rest a couple of minutes before slicing.
Notes
- Use similar-sized chicken breasts for even cooking.
- Swap mozzarella with provolone or cheddar for a different flavor twist.
- Serve with roasted veggies, rice, or a fresh salad for a complete meal.
