Tender baked chicken breasts smothered in a creamy cheddar and broccoli topping a cheesy, flavorful dinner that’s easy enough for weeknights but delicious enough for guests.

  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • Salt and pepper, to taste
  • 8 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 cup shredded cheddar cheese, divided
  • 1 tsp garlic powder
  • 1 cup broccoli buds (green tops only, no stems)

Instructions

  1. Preheat oven to 425ºF (220ºC).
  2. Grease a large roasting dish and place chicken breasts inside. Season both sides with salt and pepper.
  3. In a medium bowl, combine softened cream cheese, mayonnaise, 1/2 cup cheddar cheese, garlic powder, salt, pepper, and broccoli buds. Mix well.
  4. Spread the cream cheese mixture over each chicken breast. Sprinkle remaining 1/2 cup cheddar on top.
  5. Bake uncovered for 20 minutes. Check internal temperature; if needed, cover with foil and bake an additional 15–20 minutes, until chicken reaches 165ºF (74ºC).
  6. Remove from oven, let rest a few minutes, and serve.

Notes

  • Use freshly shredded cheddar for best melting and flavor.
  • Substitute broccoli with finely chopped spinach for a different twist.
