- 4 boneless, skinless chicken breasts (pounded to even thickness)
- Salt and pepper, to taste
- 8 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1 cup shredded cheddar cheese, divided
- 1 tsp garlic powder
- 1 cup broccoli buds (green tops only, no stems)
Instructions
- Preheat oven to 425ºF (220ºC).
- Grease a large roasting dish and place chicken breasts inside. Season both sides with salt and pepper.
- In a medium bowl, combine softened cream cheese, mayonnaise, 1/2 cup cheddar cheese, garlic powder, salt, pepper, and broccoli buds. Mix well.
- Spread the cream cheese mixture over each chicken breast. Sprinkle remaining 1/2 cup cheddar on top.
- Bake uncovered for 20 minutes. Check internal temperature; if needed, cover with foil and bake an additional 15–20 minutes, until chicken reaches 165ºF (74ºC).
- Remove from oven, let rest a few minutes, and serve.
Notes
- Use freshly shredded cheddar for best melting and flavor.
- Substitute broccoli with finely chopped spinach for a different twist.
