- 4 boneless, skinless chicken breasts
- 1 cup fresh blueberries
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried thyme)
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
Instructions
- In a bowl, mix olive oil, honey, thyme, garlic, balsamic vinegar, salt, and pepper.
- Gently fold in blueberries without crushing them.
- Place chicken in a resealable bag or bowl and pour marinade over. Marinate 30 minutes to 2 hours in refrigerator.
- Preheat oven to 400°F (200°C).
- Heat an oven-safe skillet over medium-high heat with a little olive oil. Remove chicken from marinade (reserve marinade) and sear 3-4 minutes per side until golden.
- Pour reserved marinade with blueberries over chicken.
- Transfer skillet to oven and bake 15-20 minutes, until internal temperature reaches 165°F (75°C).
- Rest 5 minutes before slicing. Spoon blueberry sauce over chicken and serve.
