  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup cooked white rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • 1/2 cup tzatziki sauce
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, parsley, Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and pepper.
  3. Mix until well combined, then shape into 1–1.5 inch meatballs.
  4. Place meatballs on a lined baking sheet and drizzle with olive oil.
  5. Bake for 15–20 minutes until cooked through and lightly browned.
  6. Prepare rice according to package instructions if not already cooked.
  7. In a bowl, toss cherry tomatoes, cucumber, red onion, and olives.
  8. Let meatballs rest for a few minutes after baking.
  9. Assemble bowls with rice, vegetables, meatballs, and tzatziki.
  10. Finish with fresh lemon juice and serve immediately.
