- 4 salmon fillets (skin-on)
- 2 cups fresh spinach (or kale)
- 4 oz cream cheese (or ricotta/Greek yogurt)
- 1/2 cup Parmesan cheese (or feta/goat cheese)
- 3 tbsp blackening seasoning
- 2 tbsp fresh lemon juice
- Cooking spray or parchment paper
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or coat with cooking spray.
- Sauté spinach in a medium skillet over medium heat for 3 minutes until wilted. Mix with cream cheese and Parmesan to form the filling.
- Season both sides of salmon fillets with blackening seasoning.
- Cut a pocket in each salmon fillet and stuff with the spinach-Parmesan filling.
- Place stuffed salmon on the baking sheet, drizzle with lemon juice, and bake 15–20 minutes until flaky.
- Allow salmon to rest for 5 minutes, then garnish with lemon slices or herbs before serving.
