Ingredients

  • 4 boneless, skinless chicken breasts, cut into large chunks
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 2 cups cherry tomatoes (or diced Roma tomatoes)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fresh basil leaves, chopped
  • 1 tbsp balsamic glaze (optional)

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Season chicken with olive oil, garlic, Italian seasoning, salt, and pepper.
  3. Heat a skillet over medium-high heat and sear chicken for 2–3 minutes per side until golden.
  4. Transfer chicken to a baking dish.
  5. Top with tomatoes, mozzarella, and Parmesan cheese.
  6. Bake for 20–25 minutes until chicken is cooked through and cheese is bubbly.
  7. Remove from oven, sprinkle with fresh basil, drizzle with balsamic glaze if desired, and serve.

Notes

  • Add red pepper flakes for a spicier version.
  • Chicken can be substituted with turkey.
  • Store leftovers in the refrigerator for up to 3 days.
