- 4 boneless, skinless chicken breasts, cut into large chunks
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 2 cups cherry tomatoes (or diced Roma tomatoes)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup fresh basil leaves, chopped
- 1 tbsp balsamic glaze (optional)
Instructions
- Preheat oven to 190°C (375°F).
- Season chicken with olive oil, garlic, Italian seasoning, salt, and pepper.
- Heat a skillet over medium-high heat and sear chicken for 2–3 minutes per side until golden.
- Transfer chicken to a baking dish.
- Top with tomatoes, mozzarella, and Parmesan cheese.
- Bake for 20–25 minutes until chicken is cooked through and cheese is bubbly.
- Remove from oven, sprinkle with fresh basil, drizzle with balsamic glaze if desired, and serve.
Notes
- Add red pepper flakes for a spicier version.
- Chicken can be substituted with turkey.
- Store leftovers in the refrigerator for up to 3 days.
