Ingredients

  • ½ pound lean ground beef
  • ½ cup diced yellow onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 2 tablespoons taco seasoning
  • 8 ounces Colby jack cheese, shredded
  • 12 ounces tortilla chips (about â…” of the bag)
  • Optional garnish: sour cream, diced tomatoes, chopped fresh cilantro

Instructions

  1. Preheat oven to 450°F (232°C). Spray a 12-cup bundt pan with cooking spray.
  2. Cook ground beef, onion, salt, and pepper in a skillet over medium-high heat 6-7 minutes until no pink remains; drain fat.
  3. Stir in water and taco seasoning; cook 2-3 minutes until liquid evaporates. Remove from heat.
  4. Layer half of the cheese in the bottom of bundt pan, then half of beef mixture, and â…“ of tortilla chips.
  5. Add remaining cheese, beef, and another â…“ of chips.
  6. Bake for 10 minutes.
  7. Invert onto a heatproof plate, remove pan carefully, replace any stuck cheese, and top with optional garnishes. Serve warm.
