  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper
  • 2 teaspoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, diced
  • 4 teaspoons garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup parmesan cheese, grated (plus more for garnish)
  • 2 tablespoons Cajun seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, bring water and 1 teaspoon salt to a boil. Cook ziti noodles al dente according to package instructions. Reserve 1 cup pasta water, drain the rest, rinse noodles, add 1 tablespoon olive oil, and toss to coat. Set aside.
  2. Pound chicken breasts to even thickness and season with 1 teaspoon Cajun seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Heat 2 teaspoons olive oil in a large skillet over medium heat. Cook chicken 5–6 minutes per side until internal temperature reaches 165°F. Remove and slice into thin strips, tent to keep warm.
  4. In the same skillet, melt butter and cook diced onions 8–10 minutes until softened. Add garlic and cook 1 minute.
  5. Add heavy cream, 1/2 cup reserved pasta water, parmesan cheese, and 2 tablespoons Cajun seasoning. Stir to combine and taste for seasoning adjustments.
  6. Reduce heat to low, add cooked noodles, and toss. Add sliced chicken and combine well. Adjust sauce consistency with remaining pasta water if needed.
  7. Garnish with fresh parsley and additional parmesan. Serve immediately.

Notes

  • For extra flavor, sprinkle additional Cajun seasoning on top before serving.
  • Use freshly grated parmesan for the best texture and taste.
