- 8 ounces ziti noodles
- 1 teaspoon kosher salt
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon kosher salt
- 1/4 teaspoon fresh ground black pepper
- 2 teaspoons olive oil
- 2 tablespoons unsalted butter
- 1 small yellow onion, diced
- 4 teaspoons garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup parmesan cheese, grated (plus more for garnish)
- 2 tablespoons Cajun seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, bring water and 1 teaspoon salt to a boil. Cook ziti noodles al dente according to package instructions. Reserve 1 cup pasta water, drain the rest, rinse noodles, add 1 tablespoon olive oil, and toss to coat. Set aside.
- Pound chicken breasts to even thickness and season with 1 teaspoon Cajun seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Heat 2 teaspoons olive oil in a large skillet over medium heat. Cook chicken 5–6 minutes per side until internal temperature reaches 165°F. Remove and slice into thin strips, tent to keep warm.
- In the same skillet, melt butter and cook diced onions 8–10 minutes until softened. Add garlic and cook 1 minute.
- Add heavy cream, 1/2 cup reserved pasta water, parmesan cheese, and 2 tablespoons Cajun seasoning. Stir to combine and taste for seasoning adjustments.
- Reduce heat to low, add cooked noodles, and toss. Add sliced chicken and combine well. Adjust sauce consistency with remaining pasta water if needed.
- Garnish with fresh parsley and additional parmesan. Serve immediately.
Notes
- For extra flavor, sprinkle additional Cajun seasoning on top before serving.
- Use freshly grated parmesan for the best texture and taste.
