- 2 English cucumbers, sliced into 1/8-inch rounds
- 1 cup crab or imitation crab, diced
- 1 avocado, cubed right before serving
- 1/4 cup mayonnaise, adjust to taste
- 2 oz cream cheese, optional
- 2 tbsp soy sauce
- 1 tbsp sesame seeds, for garnish (optional)
- Optional add-ons: 1/4 cup chopped scallions, 1/4 cup chopped radishes
Instructions
- Slice cucumbers thinly and sprinkle with salt. Drain in a colander 15-20 minutes, then pat dry.
- In a large bowl, combine cucumbers, diced crab, and avocado. Stir gently to mix.
- In a separate bowl, whisk together mayonnaise, cream cheese (if using), soy sauce, and sesame seeds. Adjust creaminess to taste.
- Pour dressing over cucumber mixture and toss gently until evenly coated.
- Serve immediately or chill briefly. Garnish with extra sesame seeds if desired.
Notes
- Best enjoyed fresh. Consume within 24 hours if storing.
