Ingredients

  • 2 English cucumbers, sliced into 1/8-inch rounds
  • 1 cup crab or imitation crab, diced
  • 1 avocado, cubed right before serving
  • 1/4 cup mayonnaise, adjust to taste
  • 2 oz cream cheese, optional
  • 2 tbsp soy sauce
  • 1 tbsp sesame seeds, for garnish (optional)
  • Optional add-ons: 1/4 cup chopped scallions, 1/4 cup chopped radishes

Instructions

  1. Slice cucumbers thinly and sprinkle with salt. Drain in a colander 15-20 minutes, then pat dry.
  2. In a large bowl, combine cucumbers, diced crab, and avocado. Stir gently to mix.
  3. In a separate bowl, whisk together mayonnaise, cream cheese (if using), soy sauce, and sesame seeds. Adjust creaminess to taste.
  4. Pour dressing over cucumber mixture and toss gently until evenly coated.
  5. Serve immediately or chill briefly. Garnish with extra sesame seeds if desired.
