Cattle Drive Casserole is a robust and flavorful layered dish that blends the bold spirit of the Old West with a touch of Tex-Mex flair. With seasoned beef, a tender biscuit base, and a creamy, cheesy topping, it’s a hearty family favorite.

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2 1/2 cups biscuit mix
  • 1 cup water
  • Cooking spray
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1 1/2 cups shredded cheddar cheese (Fiesta blend), divided
  • 1 teaspoon garlic powder
  • 1/2 cup mild salsa

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet over medium-high heat, cook ground beef until no longer pink. Drain excess fat.
  3. In a mixing bowl, combine biscuit mix and water until blended. Spray a 9×13-inch casserole dish and press dough evenly into the bottom. Bake 5–8 minutes until set and lightly golden. Keep oven on.
  4. Add chopped onion and red bell pepper to the cooked beef. Cook about 4 minutes. Stir in taco seasoning and remove from heat.
  5. Spread beef mixture evenly over the baked biscuit layer.
  6. In a bowl, mix sour cream, mayonnaise, green chiles, 3/4 cup shredded cheese, and garlic powder until smooth. Spread over beef layer.
  7. Spoon salsa evenly over the top without spreading. Sprinkle remaining cheese on top.
  8. Bake uncovered for 30 minutes until hot and bubbly.

Notes

  • Drain beef well to avoid excess grease in the casserole.
  • Use mild or medium salsa depending on heat preference.
  • Let rest 5–10 minutes before slicing for cleaner servings.
