Instructions
- Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray or melted butter.
- In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk together the buttermilk, melted butter, eggs, and honey (if using) until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; it’s okay if there are a few lumps.
- Fold in the shredded cheddar cheese and chopped pickled jalapeños.
- Pour about 1/2 to 2/3 cup of batter (depending on your waffle iron) onto the preheated iron. Close the lid and cook until golden brown, about 4–5 minutes.
- Carefully remove the waffles and serve hot. Top with butter, extra cheese, sour cream, or a drizzle of honey for added flavor.
- Pair with fried eggs, bacon, or a spicy salsa for a complete meal!

- For extra crispiness, keep cooked waffles warm in a 200°F (93°C) oven while finishing the batch.
