  • 1 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1/3 cup pickled jalapeños, chopped (adjust for spice preference)
  • 1 tablespoon honey (optional)
  • Cooking spray or melted butter (for waffle iron)

Instructions

  1. Preheat and lightly grease waffle iron with cooking spray or butter.
  2. In a large bowl, whisk cornmeal, flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk buttermilk, melted butter, eggs, and honey until smooth.
  4. Combine wet and dry ingredients, mixing gently until just combined. Fold in cheddar cheese and jalapeños.
  5. Pour about 1/2–2/3 cup batter onto waffle iron and cook 4–5 minutes until golden brown.
  6. Serve hot with butter, sour cream, honey, or salsa.

Notes
