  • 1 (9 oz) package refrigerated cheese tortellini
  • 1 (10 oz) can red enchilada sauce
  • ½ cup cream cheese
  • 1 cup shredded mozzarella cheese
  • ½ medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  1. In a large skillet over medium heat, sauté the diced onion until translucent (3–4 minutes). Add garlic and cook for 30 seconds.
  2. Add ground beef, season with salt, pepper, chili powder, and cumin. Cook until browned, then drain excess fat.
  3. Pour in enchilada sauce and bring to a simmer.
  4. Add cream cheese in chunks and stir until melted and combined.
  5. Fold in the cheese tortellini. Cook on medium-low heat for 5–7 minutes until tender and heated through.
  6. Sprinkle mozzarella on top. Cover and cook 2–3 minutes, or broil until cheese is bubbly and golden.
