- 1 lb chicken breast, cubed
- 1 onion, chopped
- 2 cloves garlic
- 1.5 cups white rice
- 2 cups chicken stock
- 2 cups water
- 3 cups broccoli
- 0.5 cup milk
- 2 cups cheddar cheese
Instructions
- Brown chicken and set aside.
- Sauté onion and garlic.
- Cook rice with stock, water, and chicken.
- Add broccoli and simmer until tender.
- Stir in milk and cheese.
- Bake with remaining cheese until melted.
Notes
- Use long grain rice for best texture.
- Do not overcook broccoli.
- Let rest before serving.
- Can be made ahead and baked later.
