- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- Salt, to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a large baking dish with nonstick cooking spray.
- Season chicken breasts with garlic powder, onion powder, black pepper, and salt. Place in baking dish.
- Evenly distribute uncooked rice over chicken.
- In a bowl, mix chicken broth, cheddar cheese, and sour cream. Pour mixture over chicken and rice.
- Cover tightly with foil and bake 40–45 minutes. Remove foil and bake an additional 10–15 minutes until bubbly and golden.
