Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Using a sharp knife, cut a pocket into each chicken breast without cutting all the way through.
  3. Season inside and outside of chicken with salt and pepper.
  4. Heat olive oil in a large skillet over medium-high heat. Add butter and let it melt.
  5. Add mushrooms and cook 5–7 minutes until golden and tender.
  6. Add garlic and cook 1–2 minutes more until fragrant. Remove from heat and let cool slightly.
  7. Mix shredded mozzarella and Parmesan in a bowl.
  8. Stuff each chicken breast with mushroom mixture and cheese mixture.
  9. Place stuffed chicken in a baking dish and bake 25–30 minutes, until chicken is cooked through and cheese is bubbly.
  10. Garnish with parsley before serving.

Notes

  • For extra flavor, add spinach or sun-dried tomatoes to the stuffing.
  • Rest chicken a few minutes after baking for juicier results.
