- 4 pieces boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 tablespoons butter
- 8 ounces mushrooms, sliced
- 4 cloves garlic, minced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Using a sharp knife, cut a pocket into each chicken breast without cutting all the way through.
- Season inside and outside of chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add butter and let it melt.
- Add mushrooms and cook 5–7 minutes until golden and tender.
- Add garlic and cook 1–2 minutes more until fragrant. Remove from heat and let cool slightly.
- Mix shredded mozzarella and Parmesan in a bowl.
- Stuff each chicken breast with mushroom mixture and cheese mixture.
- Place stuffed chicken in a baking dish and bake 25–30 minutes, until chicken is cooked through and cheese is bubbly.
- Garnish with parsley before serving.
Notes
- For extra flavor, add spinach or sun-dried tomatoes to the stuffing.
- Rest chicken a few minutes after baking for juicier results.
