  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tbsp flour
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1/2 tsp paprika (optional)
  • 1/2 tsp dried thyme (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat 1 tbsp butter over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. In the same pot, melt remaining butter, sauté onion and garlic until fragrant (3 minutes).
  3. Stir in flour and cook 1–2 minutes to thicken the base.
  4. Gradually add beef broth while stirring. Add diced potatoes and simmer 15–20 minutes until tender.
  5. Add milk, salt, pepper, paprika, and thyme. Simmer 5 minutes.
  6. Stir in cheddar cheese and sour cream until melted and smooth.
  7. Return cooked ground beef to the pot. Adjust seasoning as needed.
  8. Serve hot, garnished with fresh parsley if desired.

  • Mash a few potatoes before adding cheese for a creamier texture.
