- 2 tablespoons olive oil, divided
- 1 tablespoon butter, divided
- 8 ounces sliced button mushrooms
- 1 sweet yellow onion, thinly sliced
- 1 ½ teaspoon minced garlic
- Salt, to taste
- Black pepper, to taste
- 4 chicken breasts, ½ inch thick
- ½ cup chicken broth
- 4 oz mozzarella cheese, shredded
- 1 teaspoon Italian Seasoning
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Preheat oven to 375°F. Lightly grease a 9×13 baking dish with cooking spray.
- In a large skillet, melt ½ tablespoon butter and ½ tablespoon olive oil over medium-high heat. Add mushrooms and onions, season with salt and pepper, and cook for 5 minutes. Stir in garlic and cook 20 seconds until fragrant.
- Transfer half the mushroom mixture to the baking dish, keeping the rest in the skillet.
- Return skillet to heat, add remaining butter and olive oil. Season chicken with salt, pepper, garlic powder, paprika, and Italian seasoning. Brown chicken 2 minutes per side.
- Remove chicken and arrange over mushrooms in the baking dish. Add remaining mushroom mixture and cheese over chicken.
- Pour chicken broth into the skillet, scrape up browned bits, bring to boil, and reduce 4–5 minutes. Pour over chicken in baking dish.
- Bake uncovered for 15 minutes or until chicken is cooked through. Garnish with parsley and serve.
Notes
- Use a meat thermometer to ensure chicken reaches 165°F internally.
- Button mushrooms can be substituted with cremini or baby bella for richer flavor.
- Serve with rice, pasta, or steamed vegetables for a complete meal.
