  • 2 tablespoons olive oil, divided
  • 1 tablespoon butter, divided
  • 8 ounces sliced button mushrooms
  • 1 sweet yellow onion, thinly sliced
  • 1 ½ teaspoon minced garlic
  • Salt, to taste
  • Black pepper, to taste
  • 4 chicken breasts, ½ inch thick
  • ½ cup chicken broth
  • 4 oz mozzarella cheese, shredded
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×13 baking dish with cooking spray.
  2. In a large skillet, melt ½ tablespoon butter and ½ tablespoon olive oil over medium-high heat. Add mushrooms and onions, season with salt and pepper, and cook for 5 minutes. Stir in garlic and cook 20 seconds until fragrant.
  3. Transfer half the mushroom mixture to the baking dish, keeping the rest in the skillet.
  4. Return skillet to heat, add remaining butter and olive oil. Season chicken with salt, pepper, garlic powder, paprika, and Italian seasoning. Brown chicken 2 minutes per side.
  5. Remove chicken and arrange over mushrooms in the baking dish. Add remaining mushroom mixture and cheese over chicken.
  6. Pour chicken broth into the skillet, scrape up browned bits, bring to boil, and reduce 4–5 minutes. Pour over chicken in baking dish.
  7. Bake uncovered for 15 minutes or until chicken is cooked through. Garnish with parsley and serve.

Notes

  • Use a meat thermometer to ensure chicken reaches 165°F internally.
  • Button mushrooms can be substituted with cremini or baby bella for richer flavor.
  • Serve with rice, pasta, or steamed vegetables for a complete meal.
