Enhanced with chipotle sauce and sour cream, these burritos deliver a hearty, flavorful dish perfect for a satisfying lunch or dinner. Optional fresh toppings like diced tomatoes and green onions add a burst of freshness to every bite.

  • Total Time: 40 minutes
  • Yield: 6 burritos

Ingredients

Scale
  • 1 pound ground beef (or substitute with ground turkey or plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded monterey jack cheese
  • 1/2 cup sour cream
  • 1/4 cup Taco Bell chipotle sauce (adjust to taste)
  • 6 large flour tortilla wraps
  • Salt and pepper to taste
  • Optional: diced tomatoes, chopped green onions, cilantro

Instructions

  1. Preheat the oven and cook the frozen tater tots according to the package instructions until golden and crispy.
  2. In a skillet over medium heat, brown the ground beef. Season with salt and pepper. Drain excess grease.
  3. In a large mixing bowl, combine cooked beef, crispy tater tots, shredded cheddar, and monterey jack cheeses.
  4. Warm the flour tortillas for 10–15 seconds to make them pliable.
  5. Spoon the filling onto each tortilla, drizzle with chipotle sauce, and add a dollop of sour cream.
  6. Fold the burrito sides over the filling, then fold the bottom up and roll tightly.
  7. Place burritos seam-side down in a baking dish, sprinkle with additional cheese, and bake 5–7 minutes until melted and bubbly.
  8. Serve hot with optional diced tomatoes, green onions, and cilantro.

Notes

  • Warming tortillas helps prevent cracking and makes rolling easier.
  • Substitute ground beef with ground turkey or plant-based protein if desired.
  • Increase chipotle sauce or add fresh jalapeños for extra spice.
  • Leftover burritos can be refrigerated up to 3 days and reheated.
