  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice baby potatoes into halves or quarters depending on size.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. In a small bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper.
  5. Toss the potatoes in olive oil and half of the seasoning mix until evenly coated.
  6. Spread the seasoned potatoes on a baking sheet and scatter the sausage slices over the top.
  7. Roast in the oven for 35–40 minutes, stirring halfway through for even cooking.
  8. Sprinkle shredded cheddar cheese over the top and bake for an additional 5 minutes until melted and bubbly.
  9. Garnish with chopped parsley and serve hot with a dollop of sour cream if desired.
