- 1 big block Velveeta cheese, cubed
- 1 (8 oz) block cream cheese, softened
- 1 can cream of chicken soup
- 1 can Rotel tomatoes with chilies, undrained
- 2.25 lbs ground beef
- 1 box bowtie noodles (farfalle)
- Optional: 1 cup pasta water (reserved)
Instructions
- Bring salted water to a boil in a large pot. Add bowtie noodles and cook according to package instructions until al dente.
- Reserve 1 cup pasta water, then drain and set noodles aside.
- In a large skillet over medium heat, cook ground beef until browned and fully cooked. Break into small pieces and drain excess fat if needed.
- Add cubed Velveeta cheese, softened cream cheese, cream of chicken soup, and undrained Rotel tomatoes to the skillet with the beef.
- Stir over medium heat until cheeses are melted and sauce is smooth and creamy.
- Add cooked noodles to the skillet and toss to coat in the sauce.
- If sauce is too thick, gradually add reserved pasta water to reach desired consistency.
- Serve warm.
