- 4 boneless, skinless chicken breasts
- 8 slices deli-style turkey
- 4 slices Swiss cheese
- 1 cup breadcrumbs (preferably panko)
- 2 large eggs
- 1 cup flour
- 1/2 cup milk
- 4 tablespoons butter
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Place each chicken breast between two sheets of plastic wrap and pound until about 1/2 inch thick.
- Lay two slices of turkey and one slice of Swiss cheese on each flattened chicken breast, then roll tightly and secure with toothpicks or kitchen twine.
- Set up a breading station with flour, beaten eggs mixed with milk, and breadcrumbs mixed with garlic powder.
- Coat each chicken roll in flour, dip in the egg mixture, then coat with breadcrumbs.
- Melt 2 tablespoons of butter in a large skillet over medium heat and cook chicken rolls for 4-5 minutes on each side until golden brown.
- Transfer to a baking dish and bake for 20-25 minutes until internal temperature reaches 165°F (75°C).
- Prepare Swiss cheese sauce by melting remaining butter in a saucepan, whisk in flour, then gradually add milk and Swiss cheese until smooth.
- Serve chicken rolls drizzled with the Swiss cheese sauce.
