  • 1 lb ground chicken (or turkey/pork)
  • 1 small sweet yellow onion, diced
  • 34 garlic cloves, minced
  • 1 tsp ground ginger
  • 16 oz coleslaw mix (shredded cabbage and carrots)
  • ½ cup reduced-sodium soy sauce
  • ½ tsp black pepper
  • ½ tsp salt, optional
  • 3 green onions, sliced for garnish
  • 1 tbsp sesame seeds, optional garnish
  • Hoisin sauce or extra soy sauce, optional for serving

Instructions

  1. Heat oils in a large skillet over medium-high heat, cook ground chicken 4–5 minutes until browned, crumbling occasionally.
  2. Add onions, cook 5 minutes until tender.
  3. Add garlic and ginger, cook 1 minute until fragrant.
  4. Add coleslaw mix and soy sauce, season with pepper (and optional salt). Cook 5 minutes until cabbage wilts, stirring occasionally.
  5. Optional: add extra veggies like broccoli, bell peppers, or mushrooms to bulk up nutrients.
  6. Garnish with green onions, sesame seeds, and optional sauces. Serve immediately.
