- 2 cups cottage cheese (full-fat for creaminess)
- 1 cup marinara sauce (store-bought or homemade)
- 1 cup chopped bell peppers
- 1 cup sliced mushrooms
- 1 cup chopped spinach or kale
- 1 cup shredded mozzarella cheese
- Optional toppings: sliced olives, diced onions, fresh basil
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Spread cottage cheese evenly in a medium baking dish.
- Spoon marinara sauce over the cottage cheese.
- Scatter bell peppers, mushrooms, and spinach or kale evenly over the sauce.
- Sprinkle shredded mozzarella cheese on top.
- Drizzle olive oil, season with salt and pepper.
- Bake for 20–25 minutes until bubbly and golden.
- Allow to cool slightly and garnish with fresh basil if desired.
