- 1 1/2 pounds ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 5 large potatoes, peeled and chunked
- 1 can (10.75 oz) cream of mushroom soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- Brown ground beef with onion, garlic, and red bell pepper until meat is cooked and vegetables are tender. Drain fat.
- Combine cream of mushroom soup, milk, salt, pepper, and paprika in a bowl.
- Layer half of the potatoes in the slow cooker, top with half the meat mixture and half the soup mixture. Repeat layers.
- Cover and cook on low for 5-6 hours until potatoes are tender.
- Top with shredded cheese and cook covered for another 20 minutes until melted.
- Garnish with parsley and serve warm.
Notes
- Substitute ground turkey or chicken for beef if desired.
- Add extra vegetables like corn or carrots for more nutrition.
- Top with crushed tortilla chips for extra crunch.
