  • 1 1/2 pounds ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 5 large potatoes, peeled and chunked
  • 1 can (10.75 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Brown ground beef with onion, garlic, and red bell pepper until meat is cooked and vegetables are tender. Drain fat.
  2. Combine cream of mushroom soup, milk, salt, pepper, and paprika in a bowl.
  3. Layer half of the potatoes in the slow cooker, top with half the meat mixture and half the soup mixture. Repeat layers.
  4. Cover and cook on low for 5-6 hours until potatoes are tender.
  5. Top with shredded cheese and cook covered for another 20 minutes until melted.
  6. Garnish with parsley and serve warm.
