- 1.5 lbs boneless skinless chicken breasts or thighs
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 tbsp olive oil
- 2 tbsp butter
- 2 cups sliced mushrooms (cremini or button)
- 3 cloves garlic, minced
- 3 cups fresh baby spinach
- ½ cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Pinch of red pepper flakes (optional)
- Fresh parsley or thyme for garnish
Instructions
- Season chicken with salt, black pepper, and paprika.
- In a skillet, heat olive oil and butter over medium heat. Cook chicken until golden and cooked through, 6-7 minutes per side. Remove and set aside.
- Sauté mushrooms until browned. Add garlic and cook until fragrant.
- Stir in spinach until wilted.
- Add chicken broth and heavy cream; combine. Gradually stir in Parmesan until melted.
- Return chicken to skillet and simmer 3-4 minutes to absorb flavors.
- Garnish with parsley or thyme before serving.
