- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 ounces Boursin cheese, softened
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breasts and cook for 5–7 minutes per side until cooked through. Remove and set aside.
- Reduce heat to medium. Add Boursin cheese, chicken broth, and heavy cream to the skillet. Whisk until smooth.
- Stir in parsley and thyme.
- Return chicken to the skillet, spoon sauce over, and simmer 2–3 minutes until heated through.
- Serve immediately.
Notes
- Serve with pasta or rice for a complete meal.
- Optional: add a squeeze of lemon juice to the sauce before serving for extra flavor.
