  • 2 chicken breasts, sliced
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & pepper
  • Pasta & Sauce:
  • 3 cups cooked penne
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tsp Italian seasoning
  • Salt & pepper
  • Topping:
  • 1/2–1 cup shredded mozzarella
  • Parsley to garnish

Instructions

  1. Cook the Chicken: Season sliced chicken with garlic powder, paprika, salt, and pepper. Sear in olive oil until golden and fully cooked. Set aside.
  2. Make the Creamy Sauce: In the same pan, melt butter and cook garlic 30 seconds. Add cream, broth, Parmesan, Italian seasoning, tomatoes, salt, and pepper. Simmer until thickened.
  3. Combine: Toss the cooked penne with the sauce. Fold in half the chicken, then place the rest on top.
  4. Top & Bake: Add mozzarella over the chicken. Bake at 400°F (200°C) for 10–12 minutes until melted and slightly golden.
  5. Serve: Garnish with parsley and enjoy warm.
