- Chicken:
- 2 chicken breasts, sliced
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt & pepper
- Pasta & Sauce:
- 3 cups cooked penne
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan
- 1 cup diced tomatoes (canned or fresh)
- 1 tsp Italian seasoning
- Salt & pepper
- Topping:
- 1/2–1 cup shredded mozzarella
- Parsley to garnish
Instructions
- Cook the Chicken: Season sliced chicken with garlic powder, paprika, salt, and pepper. Sear in olive oil until golden and fully cooked. Set aside.
- Make the Creamy Sauce: In the same pan, melt butter and cook garlic 30 seconds. Add cream, broth, Parmesan, Italian seasoning, tomatoes, salt, and pepper. Simmer until thickened.
- Combine: Toss the cooked penne with the sauce. Fold in half the chicken, then place the rest on top.
- Top & Bake: Add mozzarella over the chicken. Bake at 400°F (200°C) for 10–12 minutes until melted and slightly golden.
- Serve: Garnish with parsley and enjoy warm.

- Use fresh or canned tomatoes based on preference.
- Adjust seasoning and cheese amount to taste.
