- 1 lb (450g) large shrimp, peeled & deveined
- 4 large potatoes, peeled & chunked
- 4 tbsp butter (divided)
- 1/2 cup heavy cream (for mashed potatoes)
- 1/4 cup milk (for mashed potatoes)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream (for sauce)
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil potatoes in salted water until fork-tender (about 15 min).
- Mash with 2 tbsp butter, heavy cream, and milk until smooth. Season; keep warm.
- Heat olive oil in a skillet; cook shrimp 2–3 min per side. Remove shrimp.
- Melt butter; sauté garlic for 1 min. Add cream & chicken broth; simmer 3–4 min.
- Stir in Parmesan until melted.
- Return shrimp to skillet; coat in sauce.
- Serve over mashed potatoes; garnish with parsley.
Notes
- Avoid overcooking shrimp for best texture.
- Warm milk before adding to potatoes for smoother mash.
- Add a squeeze of lemon for brightness, if desired.
