  • 1 lb (450g) large shrimp, peeled & deveined
  • 4 large potatoes, peeled & chunked
  • 4 tbsp butter (divided)
  • 1/2 cup heavy cream (for mashed potatoes)
  • 1/4 cup milk (for mashed potatoes)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream (for sauce)
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil potatoes in salted water until fork-tender (about 15 min).
  2. Mash with 2 tbsp butter, heavy cream, and milk until smooth. Season; keep warm.
  3. Heat olive oil in a skillet; cook shrimp 2–3 min per side. Remove shrimp.
  4. Melt butter; sauté garlic for 1 min. Add cream & chicken broth; simmer 3–4 min.
  5. Stir in Parmesan until melted.
  6. Return shrimp to skillet; coat in sauce.
  7. Serve over mashed potatoes; garnish with parsley.

Notes

  • Avoid overcooking shrimp for best texture.
  • Warm milk before adding to potatoes for smoother mash.
  • Add a squeeze of lemon for brightness, if desired.
