- 1 pound gnocchi
- 2 tablespoons olive oil
- 4 cups fresh spinach
- 4 ounces feta cheese, crumbled
- 2 cloves garlic, minced
- Salt to taste
- Black pepper to taste
- 1 teaspoon red pepper flakes (optional)
Instructions
- Bring a pot of salted water to a boil and cook gnocchi until they float, about 2–3 minutes. Remove and drain.
- Heat olive oil in a pan over medium-high heat. Add gnocchi and cook undisturbed for 2–3 minutes until golden and crispy.
- Stir and cook another 2–3 minutes until crispy on all sides.
- Reduce heat, add garlic, and sauté for 1 minute.
- Add spinach and cook until wilted.
- Season with salt, pepper, and red pepper flakes.
- Remove from heat, stir in feta cheese, and serve immediately.
Notes
- Add cherry tomatoes or vegetables like zucchini for variation.
- Ensure pan is hot before adding gnocchi for best crispiness.
- Substitute spinach with kale or Swiss chard if desired.
- Store leftovers in fridge for 1–2 days and reheat in a pan.
