- For the Chicken:
- 1 pound boneless, skinless chicken thighs or breasts
- For the Sauce:
- 1 cup sliced pepperoncini (fresh or jarred)
- 1 cup heavy cream (or half-and-half for lighter option)
- 3 cloves fresh minced garlic
- 1 cup low-sodium chicken broth
- For Seasoning:
- Salt, to taste
- Pepper, to taste
Instructions
- Pat chicken dry and season both sides with salt and pepper.
- Heat olive oil in a non-stick skillet over medium heat. Cook chicken 6–7 minutes per side until golden brown.
- Reduce heat, add garlic and sauté 1 minute until fragrant.
- Add pepperoncini and sauté 2–3 minutes.
- Pour in chicken broth and heavy cream, stir, and simmer 5–7 minutes until sauce thickens.
- Adjust seasoning as needed and serve hot with your choice of sides.
