- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups russet potatoes, peeled and diced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 4 cups beef broth
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup shredded cheddar cheese
Instructions
- In a large pot over medium heat, brown ground beef and drain excess fat.
- Add onion and garlic; sauté until softened.
- Stir in potatoes, carrots, celery, beef broth, parsley, basil (if using), paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer 15–20 minutes until vegetables are tender.
- In a separate saucepan, melt butter and whisk in flour; cook until golden.
- Gradually whisk in warmed milk until thickened.
- Combine cream mixture with soup pot; stir in cheddar cheese until melted.
- Adjust seasoning and serve hot.
