  • 4 boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup sour cream
  • ½ cup shredded cheese (cheddar or mozzarella)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
  3. Add diced onion and garlic to the skillet; sauté 2 minutes until fragrant.
  4. Pour in chicken broth and scrape up browned bits from the pan.
  5. Reduce heat to medium-low; add heavy cream, sour cream, and shredded cheese. Stir until combined.
  6. Return chicken to the skillet; simmer 10 minutes until sauce thickens and chicken is cooked through.
  7. Spoon chicken and creamy sauce over cooked rice. Garnish with fresh parsley and serve warm.
