Ingredients

  • 2 lbs beef chuck roast
  • 1 packet au jus gravy mix (or homemade if preferred)
  • 1 packet ranch dressing mix (optional, for extra flavor)
  • 1 onion, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 4 French rolls or hoagie buns
  • 4 slices provolone cheese (or cheese of choice)
  • Salt and pepper, to taste

Instructions

  1. Place the beef chuck roast in the crockpot. Sprinkle the ranch dressing mix (if using) and au jus gravy mix over the roast.
  2. Pour the beef broth and Worcestershire sauce over the roast. Add the sliced onion around the beef.
  3. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the meat is tender and shreds easily.
  4. Remove the beef from the crockpot and shred with two forks.
  5. Toast the French rolls or hoagie buns. Divide the shredded beef between the rolls, and top each with a slice of provolone cheese.
  6. Serve sandwiches with the au jus broth from the crockpot for dipping. Enjoy!
