Ingredients

  • 1 lb Ground Beef
  • 1/2 cup Breadcrumbs
  • 1 large Egg
  • 1 packet French Onion Soup Mix
  • 1/2 cup Swiss Cheese, Shredded
  • 1/2 cup Milk
  • Salt and Pepper, to taste

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, French onion soup mix, milk, and a generous pinch of salt and pepper.
  2. Mix everything together gently using your hands or a sturdy spoon, just until combined. Be careful not to overmix — this keeps your meatloaf tender.
  3. Line your crockpot with a liner or spray with nonstick cooking spray for easy cleanup.
  4. Shape the meat mixture into a loaf shape and place it in the center of your crockpot.
  5. Cover and cook on low for 4-5 hours, or until the internal temperature reaches 160°F and the loaf is cooked through.
  6. About 20 minutes before serving, sprinkle the shredded Swiss cheese over the top of the meatloaf, then cover and continue to heat until the cheese has melted and is bubbly.
  7. Once finished, let the meatloaf rest for 10 minutes before slicing for the best texture and flavor. Serve hot.

Notes

  • For even more flavor, substitute half the ground beef with ground pork or turkey.
  • Leftovers can be pan-fried for incredible sandwiches!
