- 1 lb Ground Beef
- 1/2 cup Breadcrumbs
- 1 large Egg
- 1 packet French Onion Soup Mix
- 1/2 cup Swiss Cheese, Shredded
- 1/2 cup Milk
- Salt and Pepper, to taste
Instructions
- In a large mixing bowl, combine the ground beef, breadcrumbs, egg, French onion soup mix, milk, and a generous pinch of salt and pepper.
- Mix everything together gently using your hands or a sturdy spoon, just until combined. Be careful not to overmix — this keeps your meatloaf tender.
- Line your crockpot with a liner or spray with nonstick cooking spray for easy cleanup.
- Shape the meat mixture into a loaf shape and place it in the center of your crockpot.
- Cover and cook on low for 4-5 hours, or until the internal temperature reaches 160°F and the loaf is cooked through.
- About 20 minutes before serving, sprinkle the shredded Swiss cheese over the top of the meatloaf, then cover and continue to heat until the cheese has melted and is bubbly.
- Once finished, let the meatloaf rest for 10 minutes before slicing for the best texture and flavor. Serve hot.
Notes
- For even more flavor, substitute half the ground beef with ground pork or turkey.
- Leftovers can be pan-fried for incredible sandwiches!
