Ingredients
- Dry Ingredients: 1 cup all-purpose flour, 1/4 cup sugar, 1 1/2 tsp baking powder, 1/2 tsp cinnamon, 1/4 tsp salt
- Wet Ingredients: 1/3 cup milk, 1 large egg, 1 tsp vanilla extract, 1 tbsp melted butter
- Fritters: 1 cup fresh peaches (peeled and diced), oil for frying
- Optional Glaze: 1 cup powdered sugar, 2–3 tbsp milk or peach juice, 1/2 tsp vanilla extract
Instructions
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk milk, egg, vanilla, and melted butter.
- Combine wet and dry mixtures, stirring until just combined.
- Fold in diced peaches gently.
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Drop spoonfuls of batter into hot oil. Fry 2–3 minutes per side until golden brown.
- Remove fritters and drain on paper towels.
- (Optional) Mix powdered sugar, milk (or peach juice), and vanilla for glaze. Drizzle over warm fritters.
Notes
- Use ripe, juicy peaches for best flavor.
- You can substitute apples or plums.
- Avoid overcrowding the fryer and monitor oil temperature for even cooking.
