  • 4 bone-in, skin-on chicken thighs
  • 1 1/2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, minced garlic, half of the Cajun seasoning, garlic powder, paprika, salt, and pepper.
  3. Spread the potatoes on the prepared sheet pan. Place the chicken thighs on top.
  4. Rub the chicken with the remaining Cajun seasoning and a drizzle of olive oil.
  5. Roast in the oven for 40–45 minutes, until the chicken reaches an internal temperature of 165°F and the potatoes are golden and tender.
  6. Sprinkle Parmesan cheese over the hot potatoes and chicken. Return to oven for 3 minutes to melt.
  7. Remove from oven, garnish with parsley, and serve warm.

Notes

  • For extra crispy chicken skin, broil for 2–3 minutes at the end of cooking.
  • Use boneless thighs or chicken breasts if preferred, but adjust cook time accordingly.
