- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3/4 cup Dutch-processed cocoa powder
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups dark chocolate chunks or chips
Instructions
- In a large bowl, beat butter, brown sugar, and granulated sugar until fluffy.
- Add eggs one at a time, beating well after each. Stir in vanilla.
- Mix in cocoa powder until combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture.
- Fold in chocolate chunks until evenly distributed.
- Chill dough for 30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop dough into balls and place on sheets. Bake 9–11 minutes until edges are set.
- Cool on pan for 5 minutes, then transfer to wire rack.
Notes
- For extra gooey cookies, slightly underbake and let them finish setting on the tray.
- You can freeze the dough balls and bake straight from frozen—just add 2 minutes to the bake time.
- Sprinkle a pinch of flaky sea salt on top before baking for a gourmet touch.
