- 2 lbs boneless, skinless chicken thighs or breasts
- 1 cup teriyaki sauce
- ½ cup honey
- ¼ cup soy sauce
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 cup bell peppers, sliced
- 1 cup onion, sliced
- 1 cup broccoli florets
- 1 tbsp sesame seeds (for garnish)
- 4 servings cooked rice (for serving)
- Chopped green onions, to taste (for garnish)
Instructions
- Place chicken thighs or breasts in the bottom of the crockpot.
- In a medium bowl, mix teriyaki sauce, honey, soy sauce, garlic, and ginger until combined.
- Pour sauce over chicken, coating evenly.
- Layer bell peppers, onion, and broccoli on top.
- Cover and cook on LOW 6–8 hours or HIGH 3–4 hours until chicken is cooked through and tender.
- Shred chicken with two forks and mix back into sauce and vegetables.
- Serve over cooked rice and garnish with sesame seeds and green onions.
Notes
- Add crushed red pepper flakes for a spicier kick.
- Vegetables can be substituted based on preference.
