Ingredients

  • 3 lbs bone-in chicken thighs and drumsticks
  • 8 fresh garlic cloves, minced
  • 2 tablespoons dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup red or white wine
  • 2 tablespoons avocado or olive oil
  • 3 whole bay leaves
  • 1/2 cup black or kalamata olives
  • 1/2 cup green olives
  • 1/4 cup capers with juice

Instructions

  1. Pat chicken dry and place in a large bowl.
  2. Add garlic, oregano, salt, pepper, wine, oil, and bay leaves. Toss to combine, cover, and refrigerate overnight.
  3. Remove chicken from fridge 30 minutes before cooking.
  4. Preheat oven to 350°F (175°C). Arrange chicken with marinade in a baking dish, stir in olives and capers, and cover with parchment, lid, or foil.
  5. Bake covered for 30 minutes.
  6. Remove cover, stir, and bake 30 more minutes or until internal temperature reaches 165°F (74°C).
  7. Sprinkle with freshly chopped parsley and serve.
