- 3 lbs bone-in chicken thighs and drumsticks
- 8 fresh garlic cloves, minced
- 2 tablespoons dried oregano
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1/4 cup red or white wine
- 2 tablespoons avocado or olive oil
- 3 whole bay leaves
- 1/2 cup black or kalamata olives
- 1/2 cup green olives
- 1/4 cup capers with juice
Instructions
- Pat chicken dry and place in a large bowl.
- Add garlic, oregano, salt, pepper, wine, oil, and bay leaves. Toss to combine, cover, and refrigerate overnight.
- Remove chicken from fridge 30 minutes before cooking.
- Preheat oven to 350°F (175°C). Arrange chicken with marinade in a baking dish, stir in olives and capers, and cover with parchment, lid, or foil.
- Bake covered for 30 minutes.
- Remove cover, stir, and bake 30 more minutes or until internal temperature reaches 165°F (74°C).
- Sprinkle with freshly chopped parsley and serve.
Notes
- Allow chicken to marinate for best flavor and tenderness.
