- 2 cups sweet potatoes, diced
- 2 cups cooked chicken, shredded
- 1 cup corn (frozen or canned)

- 1 medium red onion, diced

- 2 tablespoons olive oil

- 1 teaspoon black pepper

Instructions
- In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and sprinkle with salt and pepper. Sauté for about 10–12 minutes until tender and lightly browned.
- Stir in diced red onion and corn. Continue to sauté for about 5 minutes until the onion becomes translucent.
- Add cooked shredded chicken and BBQ sauce to the skillet. Stir well and heat through for about 3–5 minutes.
- Sprinkle shredded cheddar cheese over the mixture. Cover and reduce heat to low, cooking for an additional 2–3 minutes until cheese melts.
- Remove from heat and sprinkle with chopped green onions. Serve hot.
