Ingredients
- Large flour tortillas (Mission GF Tortillas optional)
- Shredded chicken
- Buffalo wing sauce (Frank’s or Sweet Baby Ray’s recommended)
- Chopped green onions
- Shredded Mexican cheese blend
- Ranch dressing, for dipping
Instructions
- In a mixing bowl, combine shredded chicken, chopped green onions, and buffalo wing sauce. Stir until evenly coated.
- Heat a skillet or flat griddle over medium heat and lightly coat with nonstick spray.
- Place one tortilla on the skillet. Sprinkle with a layer of shredded cheese, add an even layer of buffalo chicken, then top with another layer of cheese.
- Place a second tortilla on top. Cook until the bottom is golden brown, then carefully flip and cook until the other side is browned.
- Transfer to a cutting board and let cool for 5 minutes. Slice into wedges.
- Serve warm with ranch dressing for dipping.

- Use rotisserie chicken for a quick shortcut.
- Adjust buffalo sauce amount to control heat level.
- Serve with celery sticks for a classic pairing.
