- 1 pound ground beef
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 small onion, chopped
- 1 can cream of mushroom soup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Topping
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C). Prepare a 9×13 baking dish.
- In a large skillet over medium heat, cook ground beef and chopped onion until beef is browned. Stir occasionally.
- Drain excess grease.
- Add uncooked rice, beef broth, cream of mushroom soup, salt, and pepper. Stir well and simmer for 5 minutes.
- Transfer mixture to baking dish and spread evenly. Cover tightly with foil.
- Bake for 30 minutes.
- Remove foil, sprinkle cheddar cheese on top, and bake another 10–15 minutes until melted and bubbly.
- Let rest 5 minutes before serving.
Notes
- Prepare beef ahead and refrigerate until ready to use.
- Brown rice can be used with extra broth and longer cooking time.
- Leftovers freeze well for up to 3 months; add broth when reheating.
