  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 small onion, chopped
  • 1 can cream of mushroom soup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9×13 baking dish.
  2. In a large skillet over medium heat, cook ground beef and chopped onion until beef is browned. Stir occasionally.
  3. Drain excess grease.
  4. Add uncooked rice, beef broth, cream of mushroom soup, salt, and pepper. Stir well and simmer for 5 minutes.
  5. Transfer mixture to baking dish and spread evenly. Cover tightly with foil.
  6. Bake for 30 minutes.
  7. Remove foil, sprinkle cheddar cheese on top, and bake another 10–15 minutes until melted and bubbly.
  8. Let rest 5 minutes before serving.
