- 4 low-carb tortillas
- 8 tablespoons marinara sauce
- 2 cups shredded mozzarella cheese
- 20 slices pepperoni
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Lay the tortillas flat and spread about 2 tablespoons of marinara sauce evenly on each.
- Sprinkle shredded mozzarella cheese evenly over the sauce.
- Layer pepperoni slices on top of the cheese.
- Roll each tortilla tightly from one end to the other.
- Brush the outside of each roll-up with olive oil.
- Place the roll-ups seam-side down on a baking sheet lined with parchment paper.
- Bake for 10–12 minutes until golden and the cheese is melted.
- Remove from the oven, let cool slightly, then slice into bite-sized pieces.
- Serve warm with extra marinara sauce for dipping.
