- 1 ½ lbs ground beef
- 1 ½ lb kielbasa sausage, cut into pieces
- 4 slices bacon, chopped
- 2 medium russet potatoes, peeled and cut into ½ inch pieces
- 1 sweet yellow onion, diced
- 2 tablespoons parsley, chopped
- 2 16 oz canned baked beans, undrained
- 1 15 oz canned sweet corn
- 1 14.5 oz canned petite diced tomatoes
- 1 7 oz canned diced green chilies
- 1 cup water
- 3 tablespoons all-purpose flour
- 1 ½ teaspoon minced garlic
- 1 ½ teaspoons salt
- 1 teaspoon chili powder
- ½ teaspoon black pepper
Instructions
- Cook bacon in a large pot until brown and crispy; remove and drain on paper towels.
- Brown the kielbasa in the bacon drippings, then transfer to plate.
- Add beef, onion, and garlic to the pot, cook until beef is no longer pink. Sprinkle flour, salt, pepper, and chili powder; stir and cook 1 more minute.
- Add diced tomatoes, baked beans, green chilies, corn, potatoes, bacon, sausage, and water. Bring to boil, then reduce heat and simmer, covered, for 1 hour, stirring occasionally.
- Garnish with parsley before serving. Add extra water if stew is too thick.
Notes
- For spicier stew, add a pinch of cayenne or hot sauce.
- Can be made ahead and reheated; flavors improve after sitting overnight.
- Serve with crusty bread for a complete meal.
