  • 4 boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté onion and garlic for 2 minutes until fragrant.
  4. Add chicken broth and scrape up browned bits.
  5. Reduce heat to medium-low, add heavy cream, sour cream, and shredded cheese. Stir until melted and combined.
  6. Return chicken to skillet and simmer 10 minutes until sauce thickens.
  7. Spoon creamy chicken and sauce over cooked rice and garnish with parsley.
