This Easy Crockpot Cheesy Crack Beef Pasta is packed with tender beef, melty cheese, ranch flavor, and creamy goodness. An ultra-comforting, kid-approved slow cooker meal!

  • Total Time: 4 hours 10 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 1 lb ground beef
  • 8 oz cream cheese, cubed
  • 1 (1 oz) packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 3 cups beef broth
  • 12 oz rotini or penne pasta
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. In a skillet, brown ground beef over medium heat. Drain any excess fat.
  2. Transfer beef to crockpot. Add cream cheese, ranch seasoning, cheddar, sour cream, and beef broth. Stir gently.
  3. Cover and cook on LOW for 3–4 hours, stirring once or twice if possible.
  4. In the last 30–40 minutes, stir in uncooked pasta. Cover and continue cooking until pasta is tender, about 30–40 minutes.
  5. Stir well before serving. Garnish with green onions or parsley if desired.

Notes

  • Use rotini, penne, or shells—avoid thin pasta like spaghetti.
  • Add cooked, chopped bacon for extra crack flavor.
  • Thin sauce with extra broth or milk if needed after cooking.
