- 1 lb (450g) boneless, skinless chicken breasts (2 medium)
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon crushed red chili pepper flakes (optional)
- Pinch of salt and fresh cracked pepper
- 2 tablespoons unsalted butter
- 2–3 onions, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup chicken broth
- 1 cup shredded mozzarella cheese (or Gruyere)
- 1 lb (450g) asparagus, trimmed
- 1 tablespoon fresh chopped parsley, for garnish
Instructions
- Melt butter in a large skillet over medium-high heat. Add sliced onions, season with salt and pepper, and cook for 5–8 minutes until softened.
- Reduce heat to medium and continue cooking onions, stirring occasionally, until caramelized (about 15 minutes). Add a splash of chicken broth if the pan becomes dry.
- Stir in minced garlic and cook for about 1 minute until fragrant, then remove from heat and allow to cool slightly.
- Preheat oven to 425°F (220°C). Cut two sheets of heavy-duty aluminum foil (about 14×12 inches each) and place them on the countertop.
- Place one chicken breast in the center of each foil sheet and arrange trimmed asparagus beside the chicken.
- Drizzle lightly with olive oil and season with oregano, crushed chili pepper flakes, salt, pepper, and garlic powder.
- Spoon caramelized onions over each chicken breast and sprinkle shredded cheese on top.
- Fold and seal the foil packets, leaving a little space inside for air circulation.
- Place packets on a baking sheet and bake for 25–30 minutes until the chicken is fully cooked.
- Carefully open the foil and broil for about 2 minutes to lightly brown the cheese.
- Garnish with fresh parsley and serve immediately.
Notes
- Caramelized onions can be prepared ahead of time to save cooking time.
- If chicken breasts are very thick, slice them horizontally to ensure even cooking.
- You can substitute asparagus with broccoli, zucchini, cauliflower, or cubed potatoes.
- Parchment paper can be used instead of foil if preferred.
