Ingredients

  • 1 (15-ounce) can black beans, drained
  • 1 (10-ounce) can Rotel, drained
  • 1 bell pepper, diced (red, green, or yellow)
  • 1 cup shredded cheddar cheese
  • 1 (9.25-ounce) bag Fritos
  • Dressing:
  • 2/3 cup sour cream
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin

Instructions

  1. In a small bowl, combine all dressing ingredients and whisk until smooth.
  2. In a large bowl, combine corn, black beans, Rotel, bell pepper, and cheese.
  3. Top the salad with the dressing and gently stir to combine.
  4. Add Fritos just before serving, folding them in gently to maintain crunch.
